Meal Plan for the Week of July 7, 2018

We’re having a heat wave, and it’s not letting up this week, so quick and easy is the theme. We have friends with young kids coming over to barbecue on Sunday and we’re sticking to pretty basic BBQ food–hamburgers, hot dogs, and potato salad, and a quick, easy and delicious no-bake dessert so we get treats without the heat in the kitchen.  I have a busy day on Tuesday with back-to-back client meetings, and the a Wine Social at night–luck me!–so its pizza for the boys.  They have opted for Naan Pizza rather than take out.

Southwest Black Bean and Quinoa Burger

While we like our veggies in this family, it is hard to convince some family members to go meatless for the occasional meal.  So when I decided to go with a Meatless Monday this week it was met with resistance.  Well, guess what?  It was a delicious experiment.   My oldest heard “veggie burger” and went “No way!”, but I sort of shoved it in his face and told him to try it.  His reaction was “You never said it would taste like Mexican Black Beans.  I’m going to have one after my bike ride.”  Can you hear my eyes rolling?  You’d think he’d know by now that I know what I’m doing!  Since there is no tweaking required, I’m posting the recipe right away.  We garnished with avocado, lettuce, sliced tomatoes, and Tomatillo Salsa. Meal Plan for the Week of April 14, 2018

There aren’t really any big sales this week, so I’m just making what I feel like eating. Sunday’s dinner is fully experimental–the idea came to me as I was falling asleep one night last week.  I will let you know how it turns out on the Facebook Page (https://www.facebook.com/Xratedfood/).  If it goes well, it will show up again in the coming weeks as a recipe link. If you have been following the Weekly Plan, you’ll see Burgers up again tomorrow night.  We’re not having them two nights in a row, though; I went to Costco today and bought a BBQ chicken, as you do when you go to Costco, so we have switched burgers out for BBQ Chicken Naan Pizza.  And finally, Friday’s Mexican Chicken and Rice will be the Recipe of the Week.  Look for that to be posted on Monday. Meal Plan for the Week of March 24, 2018

Sorry for the late post this week.  Your blogger is experiencing technical difficulties.  Loblaws has their whole Free From brand chickens on sale for $2.49/lb this week, so we will be roasting two on Saturday and living off the leftovers for a few days.  The Free From chickens are worth buying, especially when they’re on sale, because they are a much more flavourful bird than the regular chickens.  And remember, since your oven is fully hot anyway it doesn’t cost any more to cook two chickens at the same time and get leftovers for easy prep meals during the week or to have cooked chicken on hand in the freezer.  The Chicken Tortilla Soup is going to be the featured recipe this week, so look for that posting Monday morning.
