Meal Plan for the Week of April 28, 2018

This week Wednesday is McHappy Day at McDonald’s, which we always support because McDonald House Charities is a really worthy cause.  So, in keeping with having a theme for Wednesday, I decided to make every night a Theme Night this week.  In a departure from our normal habits, we will actually be dining out twice this week.  We are big fans of superhero movies in our household, and Avengers: Infinity Wars was just released, so Movie Night Monday will probably be featuring popcorn for dinner! Beef Tortellini Minestrone

I love Minestrone! It’s healthy, it’s comforting, it’s hearty, and it’s easy! You can make it so many different ways, with so many different ingredients. It all depends on what you have in your pantry and what your family likes.  This week I’m using beef tortellini as a combined pasta-and-protein ingredient because it was on sale in the flyer and reminded me that it exists and is great in soup. Meal Plan for the Week of March 24, 2018

Sorry for the late post this week.  Your blogger is experiencing technical difficulties.  Loblaws has their whole Free From brand chickens on sale for $2.49/lb this week, so we will be roasting two on Saturday and living off the leftovers for a few days.  The Free From chickens are worth buying, especially when they’re on sale, because they are a much more flavourful bird than the regular chickens.  And remember, since your oven is fully hot anyway it doesn’t cost any more to cook two chickens at the same time and get leftovers for easy prep meals during the week or to have cooked chicken on hand in the freezer.  The Chicken Tortilla Soup is going to be the featured recipe this week, so look for that posting Monday morning. Meal Plan for the Week of March 17, 2018

This week is pretty chicken-intensive because boneless, skinless chicken breast is on sale for $3/lb at Loblaws.  My tip for easy weeknight meal prep is to cook extra chicken for dinner on Sunday night and use the extra cooked chicken later on in the week.  The featured recipe this week will be Sunday night’s Moroccan Chicken, and will be posted Sunday morning.  If you follow along and make extra chicken, you are all set for Tuesday night’s Cobb Salad.  It is my youngest son’s birthday on Thursday, so dinner out has been worked into the Plan this week.  Maybe you can substitute something from one of the previous plans into your week, or fill in the blank with one of your own family favourites and share below.
