Meal Plan for the Week of July 28, 2018

My younger son is off to camp this week, so I don’t have to take his dislikes into consideration!  Actually, he’s pretty good–there’s not much he won’t eat.  I am going to a potluck networking dinner on Monday night, while the other two men/boys are home, so there are two dinner options: one I’m bringing with me, one the boys are eating at home. Which are you going to choose?  On Wednesday night I am hosting an information session for friends at our home, so some-kind-of-take-out is in the plan.  Preferably something with quick and easy clean up.  There are more links than ever in this week’s plan.  It’s time to revisit old favourites that are usually baked in the oven but will be done on the grill instead.

Quinoa Salad with Poppy Seed Dressing

I developed this recipe when I was looking for something to serve as a side dish with grilled fish.  I didn’t feel like eating the traditional starches or a basic salad, but wanted something filling and fresh, which is almost a dichotomy.  Unlike most grains, quinoa serves as both a carb and a protein, which make this an ideal dish for vegans and vegetarians, and the combination of the subtle heat of the Dijon mustard and the unexpected bursts of sweet from the grated apples make this salad a party in your mouth.  It was originally served with grilled fish with mango salsa, and it was the perfect accompaniment. Southwest Black Bean and Quinoa Burger

While we like our veggies in this family, it is hard to convince some family members to go meatless for the occasional meal.  So when I decided to go with a Meatless Monday this week it was met with resistance.  Well, guess what?  It was a delicious experiment.   My oldest heard “veggie burger” and went “No way!”, but I sort of shoved it in his face and told him to try it.  His reaction was “You never said it would taste like Mexican Black Beans.  I’m going to have one after my bike ride.”  Can you hear my eyes rolling?  You’d think he’d know by now that I know what I’m doing!  Since there is no tweaking required, I’m posting the recipe right away.  We garnished with avocado, lettuce, sliced tomatoes, and Tomatillo Salsa. Meal Plan for the Week of June 2, 2018

I decided to plan a themed week once again, using a variety of flavours and ingredients.  It’s fun to challenge myself to come up with the themes, but it can get old.  If you have some fun theme days you use in your family, I’d love to hear about them so I can try to incorporate them into the blog.  The fresh local produce is starting to appear as well, so that means salads, salsas, and fruity desserts–Oh my!  Finally, I’m extending the Meal Plan to include a shopping list of meal-specific ingredients you would need to make each dish.  It will not feature what I consider to be pantry staples, because, well, they’re staples so I would expect most kitchens to have them on hand.

Greek Salad Quinoa Bowl

This is a really fresh, protein-packed recipe for a summer night.  To add extra protein, quinoa is substituted for the lettuce.  The real beauty of a recipe like this, though, is the way you can personalize it, not only to suit your family’s needs, but to suit the individual family member’s needs.  We prepare the basic ingredients and let everyone assemble their own dinner.
