Meal Plan #5

This week my husband is out of town for half the week, which means any taxiing around of children will be done by yours truly.  This means we need everybody and everything to be flexible and adaptable.  Primarily the meal plan.  Some days may need to be swapped. Some days everyone will be eating at different times. Some days I may not have the chance to breathe, let alone cook.

One night we will be having a selection everyone’s favourite food-in-a-box: chicken wings, nuggets, Chinese dumplings, potato skins, jalapeno poppers, etc.  It’s a mixed plate.  Every now and then, you just need to sink in and own that you want to eat a big pile of junk food in front of the tv for Family Movie night.  It’s so rare to have everyone home these days, that it’s kind of nice to be able to just stick a few trays in the oven and walk away so you can all catch up.

Roast Beef Dip sandwiches with mixed green salad are another quick fix.  The sandwiches are ready to go in about 10 minutes, with a simple, spicy beef broth dip, and mixed greens with blueberries, shallots, and Pecorino Romano.

Meal Plan #3

Whole chickens are on sale this week, so we’re roasting two (seriously, this is my best time saving tip!), and having leftovers different ways for a couple of days.  And then I’m pulling in some old favourites to fill out the week.  I’m giving you the links this week!

The Cheesy Pasta Bake is such a great dinner on a cold night.  It’s total comfort food.  One of my favourite things about it is there is always enough for, not only leftovers for lunch the next day, but also for a container in the freezer for those busy days when you need a quick dinner that isn’t fast food.

I have recently discovered a store in our neighbourhood that sells food products imported from England.  They have a great selection–it’s where I go to buy my tea–and they have frozen, bowl-sized Yorkshire Puddings! You can bet I’m going to make use of those beauties.

Meal Plan for the Week of June 30, 2018

It’s a long weekend–Canada Day–and it’s crazy hot this weekend. I think we could actually cook outside without the grill.  It can reach a point sometimes when it’s actually too hot to eat, and I think we’re there this week.  This week we are sticking to fresh, light flavours, nothing too heavy.  We are spending Canada Day with friends, so I have no idea what we’re having, but I would like to take the opportunity the wish you  a Happy Canada Day!  Every day I am thankful for living in the best country in the world, a truly welcoming melting pot of cultures that has allowed me to explore a world of food without having to leave.  Although we do leave sometimes because travel is good for the soul.

Meal Plan for the Week of June 9, 2018

We are still loving the grill, and the weather is supporting this love affair. We’re running the gamut of proteins this week: chicken, fish, beef, and pork (and beans!).   We had to make some adjustments to last week’s plan because life just got in the way, so the Thai Beef with Spicy Green Beans is on repeat because we never actually got to make it.  Monday is Corn on the Cob Day, so we will be having grilled corn with our fish tacos, because who are we to let a “holiday” go by unacknowledged?

Meal Plan for the Week of June 2, 2018

I decided to plan a themed week once again, using a variety of flavours and ingredients.  It’s fun to challenge myself to come up with the themes, but it can get old.  If you have some fun theme days you use in your family, I’d love to hear about them so I can try to incorporate them into the blog.  The fresh local produce is starting to appear as well, so that means salads, salsas, and fruity desserts–Oh my!  Finally, I’m extending the Meal Plan to include a shopping list of meal-specific ingredients you would need to make each dish.  It will not feature what I consider to be pantry staples, because, well, they’re staples so I would expect most kitchens to have them on hand.
