Meal Plan #6

Looking for some variety of tastes this week, but chicken is on sale, so yes, that means two roast chickens.  I also feel like experimenting, though, with a couple of different flavours.  We will also be kicking it old school with a pork tenderloin recipe that comes from when I was a kid.  My mom used to make it for us, and then as now, it is an empty plate kind of meal.

I have linked the chicken and waffles recipe to an old recipe, Pan-Seared Haddock with Chili-Maple glaze.  The recipe gives you a guideline as to how to make the sauce, which, let’s face it, is the reason you’re eating chicken and waffles in the first place.  Use boneless, skinless chicken breast for this recipe, for maximum ease of use.

Day 1

Creamy Cilantro-Lime Chicken and Mexican Rice–Chicken thighs, cilantro, limes, whipping cream, sour cream, cream cheese, jalapenos, rice, garden cocktail, black beans, corn, onions, peppers

Day 2

Roast BBQ Chicken with Mac and Cheese and Buffalo-style Gravy–Whole chicken, lemons, thyme, onions, macaroni, cheese, hot sauce

Day 3

Pork Tenderloin Medallions in Gravy with Rice, Asparagus, and Orange-Sour Cream Sauce–Pork tenderloin, asparagus, sour cream, oranges, chicken broth

Day 4

Chicken Caesar Salad with Baguette–Cooked chicken, romaine, bacon, Pecorino Romano, croutons, Caesar dressing, baguette

Day 5

Burgers and Salad–Ground meat, ground turkey, burger buns, lettuce, cheese slices, tomato

Day 6

Chili-Maple Butter Chicken and Waffles–Chicken Breast, maple syrup, waffle mix, chili powder

Day 7

Garlic-Olive Oil Spaghetti with Sausage, Mushrooms, and asparagus, Topped with a Fried Egg–Spaghetti, garlic, Italian sausage, asparagus, mushrooms, eggs
