Meal Plan for the Week of June 30, 2018

It’s a long weekend–Canada Day–and it’s crazy hot this weekend. I think we could actually cook outside without the grill.  It can reach a point sometimes when it’s actually too hot to eat, and I think we’re there this week.  This week we are sticking to fresh, light flavours, nothing too heavy.  We are spending Canada Day with friends, so I have no idea what we’re having, but I would like to take the opportunity the wish you  a Happy Canada Day!  Every day I am thankful for living in the best country in the world, a truly welcoming melting pot of cultures that has allowed me to explore a world of food without having to leave.  Although we do leave sometimes because travel is good for the soul.

Tomatillo Salsa

Tomatillos are the main ingredient in a traditional Mexican green salsa.  Part of the appeal of these green tomatoes is their light, tangy flavour and the fact that they come canned for easy storage.  The other key ingredients are cilantro and jalapeno.  Whether you leave the seeds in the jalapeno is entirely dependent on your heat tolerance level.  Adding yogurt to the leftover salsa makes a great salad dressing.

Meal Plan for the Week of April 28, 2018

This week Wednesday is McHappy Day at McDonald’s, which we always support because McDonald House Charities is a really worthy cause.  So, in keeping with having a theme for Wednesday, I decided to make every night a Theme Night this week.  In a departure from our normal habits, we will actually be dining out twice this week.  We are big fans of superhero movies in our household, and Avengers: Infinity Wars was just released, so Movie Night Monday will probably be featuring popcorn for dinner!
