Tequila Citrus Shrimp

This recipe came to me from an old friend, Bert Jager.  We were friends in high school but inevitably lost touch because of school, moves, etc.  We got back in touch a few years ago via Facebook, proving that social media can be a force for good.  He is a fellow foodie and we have been swapping ideas back and forth for years.  When he messaged this to me last week I worked it into the Meal Plan for this week because it just sounded so yummy!  He got the original recipe from a Sammy Hagar recipe book (who knew?), but then modified it a bit. Meal Plan for the Week of October 28, 2018

So, I know I have been a little erratic in my posts recently, and I apologize.  I’ve been having an ongoing health issue that has made posting a little difficult sometimes.  I’m going to be having a surgery soon that will address the issue, but I am trying to stockpile recipes so I can keep posting while I am recovering. Meal Plans will consist of old recipes and new ones so I can have as many links as possible.  And, I know it’s shameful, but I don’t have the energy to deal with Halloween this year.  My youngest stopped going out a few years ago, so we’re sneaking out for dinner.  Sorry, kids!

Fish Tacos

Fish tacos are a regular Monday night meal for us.  Why? Well, because they’re delicious,  healthy, and easy to make.  Why Mondays? That boils down to the fact that our community waste collection is on Tuesdays, so I don’t have to have fishy smelling debris in the compost and garbage for more than one night.  Seriously, keeping that stuff around makes for poor neighbours!

Tomatillo Salsa

Tomatillos are the main ingredient in a traditional Mexican green salsa.  Part of the appeal of these green tomatoes is their light, tangy flavour and the fact that they come canned for easy storage.  The other key ingredients are cilantro and jalapeno.  Whether you leave the seeds in the jalapeno is entirely dependent on your heat tolerance level.  Adding yogurt to the leftover salsa makes a great salad dressing.
