Fish Tacos

Fish tacos are a regular Monday night meal for us.  Why? Well, because they’re delicious,  healthy, and easy to make.  Why Mondays? That boils down to the fact that our community waste collection is on Tuesdays, so I don’t have to have fishy smelling debris in the compost and garbage for more than one night.  Seriously, keeping that stuff around makes for poor neighbours!

Meal Plan for the Week of August 4, 2018

It’s a long weekend!  I hope you have planned a weekend full of absolutely nothing!  Get out there and have a good time!  My youngest comes home from camp on Saturday afternoon, so we’re going to be having two of his favourites–Dad’s burgers and Caesar salad.  On Monday I am experimenting with a BBQ sauce idea based on our favourite hotdog toppings.  Stay tuned for results.  We are heading out for a few days away this week, so while some days are our actual Meal Plan for the week, the others are plug-and-play from previous plans.  Hope you enjoy your week!

Grilled Chicken Taco

Tacos are always great because you can really put anything you want in them.  Traditionally in Mexico they keep them very simple, meat and one or two toppings depending on the filling.  Cal-Mex has heavily influenced the way most people make tacos these days, lots of lettuce, tomatoes, and salsa added in.  Grilled chicken breast makes for easy outdoor cooking, and summertime makes for  availability of a lot of fresh veggies.

Meal Plan for the Week of July 14, 2018

There’s no real strategy behind the Meal Plan this week.  There are no fantastic specials at the grocery store, no special meals to cook.  I’m mostly trying to create space in the freezer by using up some things we have in there. It’s summer, so burgers are a regular fixture.  Everyone likes them, so why not, right?  We buy ground beef, usually Lean so there is some fat content to keep them juicy, in large quantities when it’s on sale and make a dozen burgers at a time so there are always some in the freezer and it’s easy to take extra out if the kids have friends over.  If the Extra Lean beef is on sale at a lower price than the Lean, we will add in a package of ground pork for the fat/juicy component that would be missing.

Meal Plan for the Week of June 2, 2018

I decided to plan a themed week once again, using a variety of flavours and ingredients.  It’s fun to challenge myself to come up with the themes, but it can get old.  If you have some fun theme days you use in your family, I’d love to hear about them so I can try to incorporate them into the blog.  The fresh local produce is starting to appear as well, so that means salads, salsas, and fruity desserts–Oh my!  Finally, I’m extending the Meal Plan to include a shopping list of meal-specific ingredients you would need to make each dish.  It will not feature what I consider to be pantry staples, because, well, they’re staples so I would expect most kitchens to have them on hand.
