Meal Plan #6

Looking for some variety of tastes this week, but chicken is on sale, so yes, that means two roast chickens.  I also feel like experimenting, though, with a couple of different flavours.  We will also be kicking it old school with a pork tenderloin recipe that comes from when I was a kid.  My mom used to make it for us, and then as now, it is an empty plate kind of meal.

I have linked the chicken and waffles recipe to an old recipe, Pan-Seared Haddock with Chili-Maple glaze.  The recipe gives you a guideline as to how to make the sauce, which, let’s face it, is the reason you’re eating chicken and waffles in the first place.  Use boneless, skinless chicken breast for this recipe, for maximum ease of use.

Meal Plan for the Week of June 2, 2018

I decided to plan a themed week once again, using a variety of flavours and ingredients.  It’s fun to challenge myself to come up with the themes, but it can get old.  If you have some fun theme days you use in your family, I’d love to hear about them so I can try to incorporate them into the blog.  The fresh local produce is starting to appear as well, so that means salads, salsas, and fruity desserts–Oh my!  Finally, I’m extending the Meal Plan to include a shopping list of meal-specific ingredients you would need to make each dish.  It will not feature what I consider to be pantry staples, because, well, they’re staples so I would expect most kitchens to have them on hand.

Slow Cooker Pulled Pork

Pulled Pork is one of the easiest things you can make in your slow cooker.  Most directions for slow cooker pulled pork have you toss your tenderloins in with your favourite barbecue sauce, cook it on low for a few hours, shred it, and voila–pulled pork!  My method diverges from this simply because I hate trying to scrub cooked-on BBQ sauce from the inside of my slow cooker. Meal Plan for the Week of April 14, 2018

There aren’t really any big sales this week, so I’m just making what I feel like eating. Sunday’s dinner is fully experimental–the idea came to me as I was falling asleep one night last week.  I will let you know how it turns out on the Facebook Page (https://www.facebook.com/Xratedfood/).  If it goes well, it will show up again in the coming weeks as a recipe link. If you have been following the Weekly Plan, you’ll see Burgers up again tomorrow night.  We’re not having them two nights in a row, though; I went to Costco today and bought a BBQ chicken, as you do when you go to Costco, so we have switched burgers out for BBQ Chicken Naan Pizza.  And finally, Friday’s Mexican Chicken and Rice will be the Recipe of the Week.  Look for that to be posted on Monday.
