Meal Plan for the Week of October 28, 2018

So, I know I have been a little erratic in my posts recently, and I apologize.  I’ve been having an ongoing health issue that has made posting a little difficult sometimes.  I’m going to be having a surgery soon that will address the issue, but I am trying to stockpile recipes so I can keep posting while I am recovering. Meal Plans will consist of old recipes and new ones so I can have as many links as possible.  And, I know it’s shameful, but I don’t have the energy to deal with Halloween this year.  My youngest stopped going out a few years ago, so we’re sneaking out for dinner.  Sorry, kids!

Saturday

Burgers and Potato Salad–ground meat, buns, lettuce, tomatoes, potatoes, green onion

Sunday

Shepherd’s Pie–Ground lamb, potatoes, green beans, carrots, celery, onion, mushrooms

 

Monday

Baked Cheesy Pasta–penne, pasta sauce, meatballs, ricotta, mozzarella, arugula

Tuesday

Grilled Ham and Cheese Sandwiches with Cream of Tomato Soup–Ham, Cheese, canned tomatoes, cream

Wednesday

It’s Halloween, so…Candy?

Thursday

Veggie Minestrone with Quinoa–red beans, white beans, carrots, celery, onions, green beans, garden cocktail, quinoa, basil

Friday

Chicken Pozole–chicken, hominy, chicken broth, tomatillos, green chilies, cilantro, Fritos, jalapeno
