Meal Plan for the Week of September 22, 2018

This week is a mixed bag of food.  On Sunday I’m supplying a meal for a friend who recently had back surgery, so Saturday night’s dinner is supplying that–big batch baked pasta.  I’m going old school on Sunday, Mexican on Monday, and experimenting on Wednesday.  How could I not when a local International grocery store is advertising goat ribs?  Goat Ribs!  I have to try that!  Wish me luck, though…


Baked Penne with Meatballs–Penne, pasta sauce, frozen meatballs, chickpeas, ricotta, spinach, mozzarella


Sloppy Joes and salad–ground meat, tomato sauce, burger buns, lettuce, salad fixings


Fish Tacos–Haddock, Mexican Seasonings, corn tortillas, cabbage, mango, cilantro, avocado, fresh jalapeno


Goat Ribs with Rice and Beans–Goat Ribs, BBQ Seasonings, BBQ Sauce, Red Kidney Beans, rice


Thai Green Curry with Vegetables and Thai Chicken Curry Sausages–Thai green curry sauce, green beans, eggplant, broccoli, Thai Chicken Curry Sausages (from Farm Boy), coconut milk


Hot and Sour Miso Soup–Miso Broth, mushrooms, extra firm tofu, bamboo shoots, green onions, rice wine vinegar, crispy wonton strips


Turkey BALT Burgers with crudites–Ground turkey, buns, bacon, avocado, lettuce, tomato, broccoli, red onion, carrots, celery, cucumber
