Meal Plan for the Week of September 8, 2018

Whole chicken is on sale again this week, so two chickens are getting grilled, one souvlaki-style to have with Greek salad, and one just lightly seasoned, to be used for other meals during the week.  We are having a bit of a cool front (I’m not willing to call it cold) coming in, so I’m thinking soup won’t be amiss, and Tuesday is a busy day, so quick quesadillas will work well.  I have a seminar on Wednesday night and my husband is also out, so the kids are overjoyed that they’ll get to order pizza.  The oldest wants to be cooking more, so he will be making frittata on Thursday because it’s easy and easily adaptable to the ingredients you have on hand.  And that, my friends, is how this week’s plan evolved.

Meal Plan for the Week of July 28, 2018

My younger son is off to camp this week, so I don’t have to take his dislikes into consideration!  Actually, he’s pretty good–there’s not much he won’t eat.  I am going to a potluck networking dinner on Monday night, while the other two men/boys are home, so there are two dinner options: one I’m bringing with me, one the boys are eating at home. Which are you going to choose?  On Wednesday night I am hosting an information session for friends at our home, so some-kind-of-take-out is in the plan.  Preferably something with quick and easy clean up.  There are more links than ever in this week’s plan.  It’s time to revisit old favourites that are usually baked in the oven but will be done on the grill instead.

Meal Plan for the Week of June 23, 2018

You may have noticed I didn’t post a Meal Plan last week, and for that I apologize.  There were two reasons: 1) I created a Meal Plan knowing I was developing a cold, and promptly went to bed for about a week, and 2) when I finally got up and around my laptop had decided to stop recognizing that the Internet is a thing and wouldn’t acknowledge it, so even though I wanted to post, I couldn’t.  As a result of the first issue, even though I had developed the Plan with my impending sickness in mind and therefore easy-to-make meals, it didn’t get followed.  Those boys ate whatever they felt like making (cereal and sandwiches, I’m guessing).  As for the second reason, after a good 6 hours of playing and searching for the issue with the laptop, my husband found the problem and was able to rectify it.  This week we are repeating last week’s Lost Meal Plan, since it was a good one, and every now and then you want easy.

Broccoli, Ham and Cheddar Frittata with a Potato Crust

This meal is great for breakfast, brunch, lunch, or dinner and it feeds a crowd.  You can cut it into 8 generous servings, or 12-16 smaller servings and serve with bacon, sausage, fruit, and/or salad.  And once it’s in the oven you can sit back and put your feet up for a while over a cup of tea or a glass of wine.

Meal Plan for the Week of March 10-16

The freezer is pretty full right now, and there are no exceptional specials this week (except stewing beef for $3.99/lb at Loblaws), so we are saving some money by living out of the freezer.  It’s a great way to cut back on the weekly grocery budget from time to time and creates space for when those really great meat specials happen and you want to stock up.  The featured recipe is a Broccoli, Ham, and Cheddar Frittata (pictured).
