Tandoori-Style Grilled Chicken

I love Indian food, but because so much of it is made with yogurt I have to make it at home to enjoy it now.  The availability of lactose-free food makes it really easy to do this.  I’m calling it “Tandoori Style” chicken because is is grilled, rather than made in an actual Tandoor oven, but it has all the flavour and char you are looking for.  For summer meals, serving it with a variety of salads keeps it light and fresh.  For a heartier, winter meal, serve it with mint scented basmati rice and curried cauliflower.  Tandoori masala is the traditional spice blend, available in the International section of your local grocery store or an Indian grocery store.   Continue reading

Meal Plan for the Week of May 19, 2018

Happy Victoria Day Weekend!  It’s the unofficial start of summer, and we are already well into BBQ season.  Love the new grill–we didn’t realize how tired the old one was until we got this new one.  It’s my birthday on the holiday Monday, so dinner is my choice (really, though, it always is), and I’m out a couple of nights this week, so the boys are filling up on the lactose-filled cheese dishes: Mac ‘n Cheese and, of course, pizza.  They can never get too much pizza.  The best thing about my birthday dinner, though, is that I don’t have to cook it!  I love to cook, but sometimes you just need a break, amiright?

Greek Salad Quinoa Bowl

This is a really fresh, protein-packed recipe for a summer night.  To add extra protein, quinoa is substituted for the lettuce.  The real beauty of a recipe like this, though, is the way you can personalize it, not only to suit your family’s needs, but to suit the individual family member’s needs.  We prepare the basic ingredients and let everyone assemble their own dinner. Meal Plan for the Week of May 5, 2018

Sorry this Plan is a little late this week.  They was a delay in getting my grocery flyers, and then I had needed to figure out whether or not I would have a grill to use this week.  Our old grill died a graceful death (not really, the bottom fell out of it!) after a moderately long but extremely productive life.  Since I make it a rule not to turn use the oven from, roughly, the May long weekend until about October, it is getting pretty critical for meal planning.  And with gorgeous weather in the forecast for the coming week, grilling is definitely in the Plan.  BBQ Achieved!

Meal Plan for the Week of April 28, 2018

This week Wednesday is McHappy Day at McDonald’s, which we always support because McDonald House Charities is a really worthy cause.  So, in keeping with having a theme for Wednesday, I decided to make every night a Theme Night this week.  In a departure from our normal habits, we will actually be dining out twice this week.  We are big fans of superhero movies in our household, and Avengers: Infinity Wars was just released, so Movie Night Monday will probably be featuring popcorn for dinner! Mongolian Hot Pot: Hot or Not?

Wednesday night I had a Girls’ Night with two very good friends (S and H), and I had the privilege of introducing them to the joys of Mongolian Hot Pot.  I had been one time previously and have been dreaming about going back ever since. For those of you who have never had Hot Pot, I will explain the experience to you.  And it is an experience—this is not just dinner, it is a complete food experience for the senses. The smells, the sights, the flavours—everything will tweak your brain’s happiness receptors.  This is not a meal for when you’re on a tight schedule.
