Comfort Me, Food!

My week hasn’t gone the way I planned, as clearly evidenced by my Wednesday blog post ending up getting done on Friday night.  I had a lot of work to do, meetings scheduled, and meals to cook. And none of it got done according to plan, because I, your faithful blogger, am experiencing technical difficulties.  My hardware is not working right. I am not even writing the same blog post I had originally planned, but I will get back to it at a later date. All because I am stuck in bed. The worst part of having my schedule messed up was my son missing his chosen birthday dinner because of me. (Although if you check this week’s Meal Plan, you will see I am hopeful of a second, more successful attempt, on Thursday.) Continue reading

Meal Plan for the Week of March 24, 2018

Sorry for the late post this week.  Your blogger is experiencing technical difficulties.  Loblaws has their whole Free From brand chickens on sale for $2.49/lb this week, so we will be roasting two on Saturday and living off the leftovers for a few days.  The Free From chickens are worth buying, especially when they’re on sale, because they are a much more flavourful bird than the regular chickens.  And remember, since your oven is fully hot anyway it doesn’t cost any more to cook two chickens at the same time and get leftovers for easy prep meals during the week or to have cooked chicken on hand in the freezer.  The Chicken Tortilla Soup is going to be the featured recipe this week, so look for that posting Monday morning. Meal Plan for the Week of March 17, 2018

This week is pretty chicken-intensive because boneless, skinless chicken breast is on sale for $3/lb at Loblaws.  My tip for easy weeknight meal prep is to cook extra chicken for dinner on Sunday night and use the extra cooked chicken later on in the week.  The featured recipe this week will be Sunday night’s Moroccan Chicken, and will be posted Sunday morning.  If you follow along and make extra chicken, you are all set for Tuesday night’s Cobb Salad.  It is my youngest son’s birthday on Thursday, so dinner out has been worked into the Plan this week.  Maybe you can substitute something from one of the previous plans into your week, or fill in the blank with one of your own family favourites and share below.
