Tequila Citrus Shrimp

This recipe came to me from an old friend, Bert Jager.  We were friends in high school but inevitably lost touch because of school, moves, etc.  We got back in touch a few years ago via Facebook, proving that social media can be a force for good.  He is a fellow foodie and we have been swapping ideas back and forth for years.  When he messaged this to me last week I worked it into the Meal Plan for this week because it just sounded so yummy!  He got the original recipe from a Sammy Hagar recipe book (who knew?), but then modified it a bit. Meal Plan #1

It’s a new year and I’m going with a new format for my weekly Meal Plan.  Just because my planning week starts on a Saturday, I realize not everyone’s does, so I am changing to a numbered day system.  I don’t really know that it will make that much difference, but we’ll give it a try.

Sunday night we are having a huge crew for dinner, so, since I’d rather socialize, and I’m still easing back into the kitchen activities, we are ordering from our favourite Chinese take out place.  Later in the week is a shrimp recipe my friend Bert sent me to try out.  I’ll take pics and post it on Instagram, and then I’ll post the recipe. Now, I got an Instant Pot for Christmas and I’ve finally taken it out of the box, so it’s time to experiment.  But it will be easy experimentation with one of my favourite slow cooker recipes, chicken and sausage.

Finally, I know I’ve been on a bit of a hiatus, but my goal for this year is consistency.  I will be posting later in the week explaining what happened and my goals for the year moving forward

Meal Plan for the Week of October 28, 2018

So, I know I have been a little erratic in my posts recently, and I apologize.  I’ve been having an ongoing health issue that has made posting a little difficult sometimes.  I’m going to be having a surgery soon that will address the issue, but I am trying to stockpile recipes so I can keep posting while I am recovering. Meal Plans will consist of old recipes and new ones so I can have as many links as possible.  And, I know it’s shameful, but I don’t have the energy to deal with Halloween this year.  My youngest stopped going out a few years ago, so we’re sneaking out for dinner.  Sorry, kids!

Baked Cheesy Pasta

This is less of a recipe and more along the lines of food assembly, but it’s super easy, versatile, and it feeds a crowd, no problem.  It is a great potluck dish, it can be kept in the freezer then popped in the oven, and if you have leftovers, they’re yummy too.  Kids love it, and it’s easily adaptable for both vegetarians and meat eaters alike.  I have a friend who is a new mom, so I’m publishing this now because it’s especially suitable for when you have a bad case of baby brain. Meal Plan for the Week of October 6, 2018

It’s Thanksgiving weekend, but we’re a small group, only three if us, so we’re doing a modified feast.  My parents are coming next weekend, so we’ll go full-fledged turkey feast then.  We’re having a turkey breast and roast veggies, and, yes, there’ll be enough for soup the next night.  We have a couple of things going on during the week that require quick-fix dinner, so that is taken into account with the plan this week.

Fish Tacos

Fish tacos are a regular Monday night meal for us.  Why? Well, because they’re delicious,  healthy, and easy to make.  Why Mondays? That boils down to the fact that our community waste collection is on Tuesdays, so I don’t have to have fishy smelling debris in the compost and garbage for more than one night.  Seriously, keeping that stuff around makes for poor neighbours!
