Meal Plan for the Week of April 28, 2018

This week Wednesday is McHappy Day at McDonald’s, which we always support because McDonald House Charities is a really worthy cause.  So, in keeping with having a theme for Wednesday, I decided to make every night a Theme Night this week.  In a departure from our normal habits, we will actually be dining out twice this week.  We are big fans of superhero movies in our household, and Avengers: Infinity Wars was just released, so Movie Night Monday will probably be featuring popcorn for dinner! Meal Plan for the Week of April 21, 2018

They have whole pork loin on sale for $2/lb at Loblaws this week, so we are buying one and cutting it into roast and chop portions for the freezer.  Tuesday’s Chicken Pot Pie is going to be the Recipe of the Week.  It’s a great way to use up leftover cooked chicken. The Hot and Sour Soup is going to used up the leftovers from Sunday’s pork roast.

Mongolian Hot Pot: Hot or Not?

Wednesday night I had a Girls’ Night with two very good friends (S and H), and I had the privilege of introducing them to the joys of Mongolian Hot Pot.  I had been one time previously and have been dreaming about going back ever since. For those of you who have never had Hot Pot, I will explain the experience to you.  And it is an experience—this is not just dinner, it is a complete food experience for the senses. The smells, the sights, the flavours—everything will tweak your brain’s happiness receptors.  This is not a meal for when you’re on a tight schedule. Plan for at least two hours of leisurely eating, and plan on leaving full. Continue reading

Beef Tortellini Minestrone

I love Minestrone! It’s healthy, it’s comforting, it’s hearty, and it’s easy! You can make it so many different ways, with so many different ingredients. It all depends on what you have in your pantry and what your family likes.  This week I’m using beef tortellini as a combined pasta-and-protein ingredient because it was on sale in the flyer and reminded me that it exists and is great in soup. Meal Plan for the Week of April 7, 2018

I’m getting my mobility back, so this week’s plan includes recipes that can be prepped quickly, and then left alone while they cook.  My oldest son has been enlisted to start cooking a meal a week for the family, so he will be following the recipe of the week for that night’s dinner.  This week it will be Thursday’s Beef Tortellini Minestrone with Garlic Bread and will be posted Monday morning.
