Herbed Rice

Using chicken or vegetable broth to cook your rice adds a tremendous amount of flavour  and a little bit of colour to a basic rice dish.  

Ready in 20-25 minutes

Serves  4-6 people

Ingredients

  • Rice of your choice (for 6 people)
  • No-sodium-added chicken broth or vegetable broth
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and Pepper to  taste

Preparation

  1. Cook your rice according to the package instructions, using the measurements they recommend and the cooking times they recommend, only substituting the broth for the water and adding all the other ingredients in the ingredients list.  At eh end of the cooking period, stir well before leaving it to stand to make sure the seasonings are mixed in, not just sitting on top.

Tips

  • I have kept the seasoning very simple because this is a side dish and I don’t want it to compete with the main dish.  But if you want to add some salty tang to it, there is nothing wrong with sprinkling some crumbled feta over the top.
  • If you don’t have onion powder, you can add some finely cut shallots or onions at the beginning of the cooking process.  You could also use fresh minced garlic, but keep in mind this will be much more pungent than the garlic powder.
