Meal Plan for the Week of August 18, 2018

Sorry I missed last week’s Meal Plan.  We were on a bit of a vacation, I had planned to work, but the day we got there a tree came down and took out the internet for our entire stay!  By the time we got home, it seemed too late. So we lived on the edge and went without a Plan, deciding each day what we felt like eating.  I hated it!  So stressful.  Talk about taking me out of my comfort zone!

This week I am experimenting with some products by Epicure.  I’m always interested in trying new things, and Epicure provides a way to experiment without investing a huge amount in ingredients.  I will keep you posted on the results, but I have high hopes based on other products by them I have tried.

My son is cooking dinner on Friday night.  The Skillet Bake is a tried-and-true recipe, and one he has cooked before, so his confidence is high with it.  He’s cooking to impress someone.

Saturday

Grilled Steak with Baked Potatoes and veggies–Sirloin, potatoes, mushrooms, green beans, carrots

Sunday

Tandoori Chicken with vegetable Pakoras and salad–chicken, naan, plain yogurt, zucchini, carrots, lettuce, mangoes, cucumber, lemon, chickpeas

Monday

Burgers with Crudites and Dip–ground meat, buns, carrots, celery, sour cream

Tuesday

Grilled Honey Mustard Pork Chops with Grilled Vegetables–pork chops, potatoes, carrots, mushrooms, Brussels sprouts

Wednesday

Thai Green Curry with Chicken and Vegetables and Sticky Rice–Chicken breast, eggplant, spinach, coconut milk, broccoli

Thursday

Grilled Hot Dogs with Broccoli Salad–Jumbo Hot dogs, buns, broccoli, red onion

Friday

Cheesy Mexican Chicken and Rice Skillet Bake–chicken breast, green chilies, black beans, salsa, cheese
