As a dessert marshmallow treats are incredibly underrated. I, personally, have always made them with Cheerios, because I feel that rice crispies as a cereal are nutritionally bereft without the milk. Cheerios, on the other hand, come in a variety of flavours, and make at least a nod to nutrition with some fibre and protein content. (I know I’m totally trying to justify Cheerios here. I just like them.) As a summer treat, they can’t be beat because you don’t have to turn on the oven or even the stove to get a spur-of-the-moment sweet snack.
Prep Time: 5 minutes, 30 minutes set time
Serves 8-12 (depending on how big you cut them)
Ingredients
- 1/4 cup butter
- 4 cups mini marshmallows
- 1 tsp vanilla
- 5 cups of the Cheerios flavour of your choice
Preparation
- Put marshmallows and butter in a large microwave-safe bowl. Microwave for 2 minutes on high. Add vanilla and stir quickly.
- When marshmallows and butter are blended, add in Cheerios and mix well, trying to get marshmallows mixed through evenly. Work fast because it gets sticky and stiff really quickly.
- Pour mixture into a lightly greased 9″ x 13″ serving dish. Spray your hands with cooking spray and push mixture firmly into the pan. Allow to sit for 30 minutes to set up before cutting and serving.
Tips
- For a festive touch during the holidays, press crushed candy canes into the top of the treats.
- For a salty-sweet snack, mix crushed pretzel pieces in with the cereal.
- Dried cranberries, pistachios, and white chocolate chips are another delicious option.
