Meal Plan for the Week of April 14, 2018
There aren’t really any big sales this week, so I’m just making what I feel like eating. Sunday’s dinner is fully experimental–the idea came to me as I was falling asleep one night last week. I will let you know how it turns out on the Facebook Page (https://www.facebook.com/Xratedfood/). If it goes well, it will show up again in the coming weeks as a recipe link. If you have been following the Weekly Plan, you’ll see Burgers up again tomorrow night. We’re not having them two nights in a row, though; I went to Costco today and bought a BBQ chicken, as you do when you go to Costco, so we have switched burgers out for BBQ Chicken Naan Pizza. Meal Plan for the Week of April 7, 2018

I’m getting my mobility back, so this week’s plan includes recipes that can be prepped quickly, and then left alone while they cook. My oldest son has been enlisted to start cooking a meal a week for the family, so he will be following the recipe of the week for that night’s dinner. This week it will be Thursday’s Beef Tortellini Minestrone with Garlic Bread and will be posted Monday morning. Continue reading
Chicken Tortilla Soup

Broccoli and Mushroom Rice Pilaf

This rice dish is cooked using the same method as a risotto, adding liquid a bit at a time until it has been absorbed. This difference is that risotto is usually made with arborio rice which gives it a creamy texture. This is made with converted rice, which allows for the individual grains to remain separate.
