Meal Plan for the Week of June 2, 2018

I decided to plan a themed week once again, using a variety of flavours and ingredients.  It’s fun to challenge myself to come up with the themes, but it can get old.  If you have some fun theme days you use in your family, I’d love to hear about them so I can try to incorporate them into the blog.  The fresh local produce is starting to appear as well, so that means salads, salsas, and fruity desserts–Oh my!  Finally, I’m extending the Meal Plan to include a shopping list of meal-specific ingredients you would need to make each dish.  It will not feature what I consider to be pantry staples, because, well, they’re staples so I would expect most kitchens to have them on hand.

Meal Plan for the Week of March 31, 2018

I’m still out of commission on the cooking front, so this week’s Meal Plan has a lot of quick and easy dishes my husband and son can prepare.  There are great specials on beef this week at Loblaws, so our Easter Sunday dinner is going to be roast beef tenderloin with all the yummy side dishes. We will be making use of the leftover beef for dinner on Tuesday.  The recipe of the week is going to be Thursday’s Garlic Butter Shrimp Linguine.  It will be posted Monday morning. Broccoli, Ham and Cheddar Frittata with a Potato Crust

This meal is great for breakfast, brunch, lunch, or dinner and it feeds a crowd.  You can cut it into 8 generous servings, or 12-16 smaller servings and serve with bacon, sausage, fruit, and/or salad.  And once it’s in the oven you can sit back and put your feet up for a while over a cup of tea or a glass of wine.
